Diabetes charity dinner (12th October 2015)

DiabetesFennel Restaurant, which was launched in 2007 by William Bird, hosted the special dining experience on Monday (12 October 2015), to raise funds for Diabetes UK and JDRF as its chef de partie, David Denham who suffers from type one diabetes, wanted to give something back to the charities that are close to his heart.

Diabetes3Diabetes4The young chef who has worked at the restaurant for over six years, developed  the special menu with Fennel Restaurant’s head chef Gordon Reynolds, showcasing a variety of diabetic friendly dishes.

Mr Denham, 22, was diagnosed with the condition when he was two-years-old, and has spent time in and out of hospital whilst getting to grips with the lifestyle changes.

He said: “I have been living with diabetes from a young age, and I’ve had to adapt to a number of different new lifestyle choices, but diet has always been a difficult one to grasp.

“As someone who suffers from the condition, I felt it was important to showcase the struggles diabetics can face through a unique event, so I approached William and the group general manager, Emma Cowie, about the possibilities of giving back to the charities who have helped me over the years and he happily agreed.

“Diabetics can eat the majority of foods in moderation, however I devised the menu so it highlighted certain dietary alterations we have to make. I used a number of cream based sauces where possible to slow the release of carbohydrates and swapped out sugars for sweeteners or natural sugars. The menu was also gluten free due to the high occurrences of celiac disease in people afflicted with diabetes and I really feel people understood the concept of the event in raising awareness of the condition.”

Owner of Fennel Restaurant, William Bird, said: “As soon as I heard about David’s idea I gave him full backing, and encouraged him to make the event bigger. I offered him full reign of the restaurant and astonishingly we learned he could have sold the event five times over, which is incredible.

“Our restaurant manager, Brian Cowie, was also recently diagnosed with type one diabetes and it is a condition which is close to all of the staff. It was great to see the team come together to help David pull off this fantastic event and we are all very proud of his achievements and the amount of money raised for both charities.”
